3 easy and delicious avocado recipes


Not only are they delicious, avocados are also nutrient dense and high in healthy fats. They contain a wide variety of vitamins and minerals including vitamin K (helps keep your bones healthy), vitamin C (helps protect cells and keep them healthy), potassium (maintains healthy heart and kidney function).

We’ve tried and tested 3 different recipes, all containing avocado that are absolutely delicious!

1. Avocado & smoked salmon bagel

A little healthy twist on the classic American “lox and cream cheese” bagel.

Makes: 2 open sandwiches

Ingredients:
  • 1 plain or sesame seed bage,l sliced in half
  • 1 whole ripe avocado
  • 60g of smoked salmon
  • A squeeze of lemon
  • Black pepper
Toast the bagel, cut the avocado in half and remove the stone. Use a spoon to carefully scoop bits of avocado onto the toasted bagel. Use a fork to spread the avocado evenly on the bagel, then top with smoked salmon, a squeeze of lemon and some black pepper. Yum!



2. Chocolate avocado mousse

Slightly adapted from Hemsley & Hemsley’s recipe, this sounds a bit whacky but try not to make any judgement until you’ve tried it!

Makes: 4-6 servings

Ingredients:
  • 1 ripe frozen banana
  • 3 tbsp of cocoa powder
  • 1 tbsp coconut oil
  • 2 tbsp runny honey
  • 1 ripe avocado

Pop all the ingredients together in a blender and blend until even and smooth. Give it a taste, add a little more cocoa powder or honey if necessary as the quantities will depend on the size of the avocado.



3. Guacamole hummus

Love guac? Love hummus? Can’t decide which you love more? This one is for you.

Makes: 6-8 servings

Ingredients:
  • 400g of chickpeas, rinsed and drained
  • 1 garlic clove
  • 1 ripe avocado
  • 3 tbsp of olive oil
  • Half a lime, juiced
  • A bunch of fresh cilantro leaves
  • Tortilla chips to serve

Pop the avocado, chickpeas, cilantro and garlic in a food processor/blender until all ingredients are finely chopped. Whilst the machine is running, slowly add the olive oil and lime juice. If the mixture is too thick, add water to taste. Season with salt and pepper and serve with tortilla chips.
